Pastillas de Ube


Ingredients:

1-115 g. (4.06 oz.) pouch of powdered ube
1-1/2 c. of full cream milk
3/4 c. of sweetened condensed milk
1/2 c. of granulated white sugar
additional granulated white sugar for coating
8-10 pieces of 6 x 6 cellophane paper and/or small paper cups





How To Prepare:

Put the first four ingredients in a thick-bottomed sauce pan. Cook over medium heat, stirring. DO NOT leave the mixture unattended because it scorches fast. Cook until the mixture is thick and coats the spatula. It took less than ten minutes in my case. Transfer the mixture into a dry clean bowl and allow to cool.

Make sure that the mixture has cooled completely before rolling in sugar; otherwise, the sugar will melt and you will have wet icky pastillas.

When the mixture is cool, form into balls about an inch in diameter or into logs about 1/2 inch in diameter and three inches in length. Roll the balls or logs in sugar. Place the balls in the paper cups; wrap the logs with the cellophane paper.

To store, place in air tight containers and keep in the fridge.

Pastilla de Pili Recipe

Ingredients:

1    can condensed milk                             
1    tablespoon corn syrup

1    cup ground nuts (pili or peanuts)        
1    teaspoon flavoring





How to make Pastillas De Pili
  • Combine all ingredients and cook until paste-like in consistency.
  • Transfer unto buttered board and roll out 1/2 inch thick.
  • Cut into pieces and roll in wax paper.
  • Wrap in waxed paper.
  • Yield: 2 dozens.

Pastillas de Mani Recipe

Ingredients:
1    can condensed milk                             
1    tablespoon corn syrup

1    cup ground nuts (pili or peanuts)       
1    teaspoon flavoring

Pastillas de Leche


Ingredients
* 1 1/2 cups fresh milk
* 3 Tbsps. sugar
* 1 tsp. butter
* 5 Tbsps. full-cream powdered milk
* 1/2 cup sugar for rolling pastillas






How To Prepare:

1. Boil milk and sugar into a paste.

2. Add butter and powdered milk. Mix thoroughly. Let the paste rest until firm enough to handle. Divide into 20 pieces and roll into small cylinders. Roll in sugar. Wrap in colorful papel de japon (Japanese paper).

Beehive Cupcakes Recipe

Beehive Cupcakes - Ingredients for the cupcake:
1 cup cake flour
1 cup sugar
1/2 tablespoon baking powder
1/4 cup cocoa
1/2 teaspoon salt
1/2 cup oil
3/4 cup milk
1/4 cup water
1/2 teaspoon vanilla
1 egg


Beehive Cupcakes - Procedure:
1. Preheat oven to 325F
2. Sift together all dry ingredients
3. Mix together all the liquid ingredients
4. Mix both mixtures together
5. Pour into muffin tins lined with paper
6. Bake for 25 to 30 minutes. Cool completely.

Beehive Cupcakes- Ingredients for the marshmallow icing:
1 cup egg whites
1/2 teaspoon cream of tartar
3 cups sugar
1 cup water
1 tablespoon corn syrup

Beehive Cupcakes - Procedure:
1. Boil corn syrup, sugar and water until it reaches a 220F syrup
2. Beat the egg whites and cream of tartar
3. When the syrup reaches 240F, slowly pour this into the egg whites
4. Beat until glossy and cool to the touch

Beehive Cupcakes - Ingredients for assembly:
24 pieces sugar bees
500 grams dark chocolate, melted
5 pieces Chocquik 5 Bar

1. Pipe a ring of marshmallow icing on top of a cupcake
2. Place chopped choquick 5 bar in the center of the ring.
3. Pipe marshmallow icing again to make beehive shape
4. Invert and dip in dark chocolate
5. Decorate with Sugar Bees

Vanilla Cupcakes

These simple cupcakes are perfect canvases for a variety of designs and flavored icings!

Ingredients:
1 cup butter, room temperature
3 cups cake flour
1 tablespoon baking powder
1 teaspoon salt
1 1/2 cups granulated sugar
4 pieces eggs
1 tablespoon vanilla extract
1 1/4 cups milk


Directions:
1. Preheat oven to 350 degrees. Line 2- 12 muffin tins with paper liners.
2. Sift together flour, baking powder, and salt in a separate bowl; set aside.
3. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, 3 to 4 minutes, scraping down the sides of the bowl as needed.
4. Beat in eggs, one at a time, then beat in vanilla.
5. With the mixer on low speed, add the flour mixture in three parts, alternating with the milk and beginning and ending with the flour; beat until combined after each addition.
6. Using an ice cream scooper, scoop batter onto the lined muffin tins filling it only 3/4, tap the pan several times to level the batter off or smooth with an offset spatula.
7. Bake, rotating the pans halfway through, until cakes are golden brown and a cake tester inserted into the center comes out clean, 20-25 minutes. Transfer pans to a wire rack and cool completely before icing the cakes.

Ingredients for Mocha Muffins:
1 pack Magnolia Pancake Plus with maple syrup
1 sachet syrup
1 egg
1 teaspoon black coffee
1 tablespoon oil
2  tablespoons brown sugar
3 tablespoons water


How to Bake Mocha Muffins:
1. Combine syrup, coffee, sugar and water.
2. Add egg, oil, and pancake mix. Blend well until free of lumps.
3. Pour butter onto lined mini muffin pans until � full.
4. Bake in oven toaster for 10-12 minutes.

Patelitos de Pescados Recipe


Ingredients:
4 c. flour
12 tbsp. butter
4 egg yolks
1 tsp. sugar
1 tsp. salt
How To Prepare:
Sift the flour, salt, and sugar. Work in the butter with tips of the fingers and fold in the well beaten yolks of 4 eggs.Sprinkle with enough cold water to bring the mass together, and work very lightly with the fingers. Place the dough on a floured board and roll to about 1/8 inch thick. Cut into 2 equal parts. On one part spread evenly the filling, made as follows:
1 onion, chopped fine
2 tomatoes, roasted, skin and seeds removed, and chopped fine
2 c. flaked fish
3 Vienna sausages, chopped fine
4 tbsp. grated cheese
1 tbsp. chopped ham
Salt and pepper to taste

Saute the onion and tomato in butter. Add the fish, sausage and ham, and cook 3 minutes longer. Then add the grated cheese. Season to taste.Cover with the other sheet of dough rolled out to 1/3 inch thick and press gently with a rolling pin. Cut in rectangles 3 inches long and 1 inch wide.
